so the spark plug 'sparks' then as it comes to tdc the rest of the fuel blows up? shouldnt there be minimal unburnt fuel left after the spark?

Nope, under power an engine should be running a bit rich, about 12:1

This is to keep things cooler as runing at stoichiometric (14.7:1) will make the most heat and can melt the pistons

Well after seeing your piston ringlands like they are I would say it was from running on too low octane, in combination with too higher ignition timing, or possibly a wack air/fuel ratio leaning out in some areas of the rev range.

Or water ingress into the combustion chamber.

NewGuy - I really think that after all the money that has been spent on this awesome car you should spend a little bit more and get someone experienced to set it up properly - timing, mixture and valve clearances are all critical on a motor like that so choose your mechanic carefully.
