Did you check also the gap of the spark plugs? You might find that they are way over gapped from use. My coon was running like a bag of arse recently and correcting the spark plug gaps from 1.7+mm down to the specified 1mm fixed it.

To me that is not a survivor car but rather a never really born car. Interesting collectors piece but if you actually used it it would lose its specialness.
I have seen a few real survivor cars here in the South. Old, well used, and still in regular use.
Localish ones include '27 Dodge Brothers 4 sold new here in Balclutha, as of six years ago owned and regularly used by an old geezer resident in Milton, and a '60 Fairlane 500 with over 300,000 miles on still being dailied by the original owner when I spied it at a show in Southland in 2013.
I have nothing against concours competitions and would go for a look / dream if close by but none of my vehicles could ever be that tidy. I like driving them too much.

Also re:Rover v8. Of course it uses all the gas. Its not like they are known for being efficient. 3.5 liters of soul destroying doom.
Triumph 3500 is actually hungrier than their V8 Discovery which I think is a 3.9.

When I bought my '51 Vanguard it ran 10 psi oil pressure on start up and the gauge dropped to zero when it got warm. Still ran sweet though.

Obviously you've balanced the wheels. Some of the symptoms sound a bit like my wife's Laser when it dropped a couple of balance weights. Of course she didn't notice just like she didn't notice when the back shocks were fucked.
That doesn't explain the gear stick shake though.

I think that is what my boss used on his Cortina. Reckoned it was the proper thing to do for the side strips that don't have clips.

Make sure the gap is correct on the new spark plugs too.
