You're falcon mad.
If you had a bit bigger budget if say go for a ford territory 7 seater.
Runs falcon driveline etc with the suv bodystyle.
Steer clear of the awd as they're a pain to work on and not much of a 4wd setup anyway.
The biggest issue you'd face is the price tag and being a 4L 6cyl it will probably be a bit thirstier.
I weighed up my options and said fuck it to the fuel economy disadvantages. Been a good bus so far. Although i didn't need 7 seats so i ripped the 3rd row out of mine.
Plus i fitted an fg xr6 turbo setup for shits n giggles lol

Always liked the mini.
I don't know the colours but do know most manufacturers had similar colours just different shades and names.
The HR Holden had a colour called finisterre green i think its called. And usually with a white roof.
This sorta combo looks good on an old mini.
Used to work on an old 850 auto in this sorta colour combo. Actually didn't go to bad. Was expecting a snail to over take it. So if yours is manual you will probably be fine.
Definitely steelies (body colour coded) and chrome hubcaps. I prefer the solid windscreen visor over the mesh.
Can be a pain when sun comes thru the mesh and makes anouying light patterns over the windscreen etc when your cruising. lol.

Try any of the holden or torana fb pages in Aust. Or the torana forum perhaps.
As for car sale sites gumtree would probably get the most views. But probably also has the most lowball scum/scammers etc.

It can depend on the battery too.
CAT batteries used to sit on the shelf dry and you would then pour in the water etc and "activate" it.
If they're like that they can probably sit for years.

I don't know how heavy they are or how big?
But the GM ecotec 4cyl engine may be something to look at.
Pretty sure the late model Camaro has a 2L turbo alloy 4cyl. 205kw or something like that.
Should punt the HB along pretty well. Lol

We've stopped using the dollys over here.
The cops have declared that the vehicle being towed (on the dolly) is still technically on the road as 2 wheels are on it.
Therefore the towed vehicle must be registered and road legal.
So if you use it for a race car etc they pull you over and defect the race car and fine you for unregistered vehicle.
Bastards.
They were very handy trailer for people with no room etc.
Thats when i bought my banana back.

It all depends on the brand.
The ones i worked with were about 50-70mm if say.
They were very old hoists

Fit the hoist as per standard.
Then make some floor panels that can lock in (dont want them moving under foot etc) and make the floor level under the vehicle (same height as the hump)
Just move them out before you lower the car.
Seen metal ones, theyre heavy as.
And seen wooden ones with skate board tape ontop for non slip etc.

I worked in a trans shop for 5 years with the bump style hoists.
You quickly learn how to work with it.
Like i said removable floor panels help aswell.

The clear floor type?
As far as i know, no.
If you shorten the height you wont get the "lift" and wont get underneath it well. (Unless you are short)
Ive seen a few with the cables, hoses etc that run across the floor and they make removable "panels" that dowel into the floor and give you a flat working surface rather than a hump in the middle which can be a pain at times.

Touch wood mine has been fine with zero dramas.
Even with a very large suburban sitting up there while wrenching away underneath and leavering etc. (Mines a 4T Molnar clearfloor)

I did one about 15yrs ago?
The shed hadbeen concreted prior to my buying the house so it was unknown.
To be safe we cut (2x) 1m x 1m squares.
Turned out it was fine but we wanted to be sure.
We drilled into existing slab and put dowels in to join the 2 slabs to existing slab. Concreter also used a bonding agent.

Ditch the head gaskets and use shims
(Like the old holden 253's)

Doing the valves and mild porting will still assist.
As will the rest. (Cam, carb etc)

Whip off the heads. Have them decked/faced a few thou to increase compression.
Get a 3 or 5 angle valve job and have them pocket ported.
Slide in a new cam and bung on a better carb and get some added spark from ign.
- same thing you do to any engine.

You'd need an adapter plate for the trans to engine.

Probably different weather areas in NZ than Aust.
Plus most people dont ever clean out the drainage channels or around rubbers in tailgate area where crap builds up and holds water.
The advantage of the easy/cheap falcon running gear out weighs most issues.
Id rather a barra 6 than some pos van engine 4cyl etc. Myself
