Popular Post sluggy
This all started with some reading over Christmas and my general obsession with smoking meat and eating it. Started looking for a bit of steel pipe, ended up with a bit 800 dia x 1500 long. I had some ends and some bits for the fire box water jet cut. All 6mm steel so it weighs a bit, good thermal mass i hope ! . Legs, in retrospect maybe 100mm too long, but it was back of a ciggy packet maths so she'll be right Opening is where the fire box joins on, it will be a reverse flow set up. I used an online calculator for all the sizing, so I hope it draws well and gets some decent heat into it. Firebox is 600 x 600 x 700, all in 6mm, including the main BBQ it weighs in at close to 400kgs. Made a log basket for the fire box. Still have to put a cooking grate in the top of the box for the sear ups. And still need to put the air vent into it, or just open the door. See the outlet from the firebox on the LHS of that photo. I bought a trailer cheap of TM and then decided not to use it barring the axle, so made this to put the smoker on
Popular Post sluggy
Trailer axle running styley mini wheels, may change this later but runs sweet at the moment. The door sprung pretty bad when I cut it, bottom RH corner was probably 15mm twisted out, i tried to straighten it, chains, 10t bottle jack, oxy torch etc.... ended up using a big pull down latch that drags it into place... Chimney is 5" ID and 1200 high, made the damper Still have to make up woodbox for trailer and maybe beer dispensing from there too, will see how it ends up. All the internal fiddly stuff needs to be done, baffles are just sitting internally right now. And the worse bit is, its at work, and I am non essential, so it gets to self isolate for 4 weeks while I think about it... Cant wait to start a fire. Upside is my welding is a lot better, although some of it is still shit. 17
Popular Post sluggy
Got a bit done illegally over the break. Pretty much finished off the fire box, got the fire grill in there for smashing a few steaks whilst awaiting the main event Have chopped a hole in the other side for fire O2 addition, yet to sort door, I have some overly technical ideas that I will thin out. Have sorted baffles at base of the cook chamber, and will ad in another meat shelf. Pretty confident i can do a whole lamby in there. 7 kg brisket in fridge ready to go. 2m3 of base model firewood delivered. Thinking I use pine/gum to get it up to heat then swap over to manuka / pohutukawa for the smoking. Heaps to do on the trailer soon. Im picking work will be slow as fuck so will punch it out.
Popular Post sluggy
Got the vent sorted, used the old handbrake handle from the Chev as the open/closer. Framed up the wood box, back bit for wood, front for other stuff. Planning on stripping my jockey box and putting beer tap into the box, lining with ply and timber.

sluggy
So got the race spec handle installed, painted the trailer rattle can black. Friday 3am, went into work, fired it up, 4.5kg brisket, fed the troops at 2.30pm, was mint as feck. Really happy with how it went, fed about 3 splits an hour to maintain 250 ish F . Picking up a slab of macro tomorrow to make top for woodbox/bar - should be done by end of week, have a 7kg brisket in the fridge that will get smashed by me and my 10 pod level 2 piss up !!

KP_wag
Well done mate, looks mint. Did I miss the conditioning step? What wood did you use for the brisket?
sluggy
Just now, KP_wag said: Well done mate, looks mint. Did I miss the conditioning step? What wood did you use for this Did do a burn for a couple of hours then the oil up and 4 hours at 300 prior to the cook. Had a mix of pohutukawa and manuka, I have a couple of m3 of each so that will be the go too for some time.

Popular Post sluggy
Still a bit if finishing to do, but basic form is there, bench tops are macro. One behind the bbq is on drawer slides, wood and stuff stored under there. Cooking another brisket this weekend.... fingers crossed !!
KP_wag
Looks wicked, perfect murica-lyfe tow wagon to suit too. Are you looking to do gigs with this or is the trailer just for fun?

Are you looking to do gigs with this or is the trailer just for fun? Just for fun really, I was thinking of hiring it out for weekends when I am not using it. Once the initial excitement is over, I wont be using it all the time. I have a pretty good feel for the fire management and have done 3 briskets in it so far and some ribs happening this week. You could get probably 8 briskets in it. One feeds a lazy 8 - 10 people, so good for crowds over Jacindas prescribed size. Considering the size, it is pretty efficient, an 8 hour cook uses about half the wood bin (depends a bit on the ambient) that is maintaining 225 - 275 F for that time, roughly 4 - 5 splits an hour. Pic is of a wagyu brisket I did last weekend on at 7am, eating at 6pm after a 2 hour rest.
